Roasted Eggplant for Baby: Peeled, Soft, and Simple
Peeled eggplant roasted with 1 tbsp olive oil at 375°F until very soft and light golden. A plain 2-ingredient recipe for babies ready for solids.

Roasted eggplant turns soft and mild in the oven, and this version keeps it to 2 ingredients: 1 medium eggplant and 1 tbsp olive oil. It's written for babies who are already ready for solid foods. Jump to the recipe
Which eggplant this is
This is an ordinary eggplant, completely peeled and roasted plain. It isn't a recipe for small "baby eggplant" varieties, and it isn't an adult dish with spices, skin left on, or tomato sauce. Nothing is added beyond the olive oil: no salt, herbs, cheese, butter, or garnish.
How the method works
- Peel it completely. A vegetable peeler removes all of the skin, and the green top and bottom base are trimmed off.
- Oil the pan. The 1 tbsp olive oil coats the baking sheet, and the eggplant pieces are arranged on it.
- Roast and turn. The pieces roast at 375°F (190°C) and get stirred or flipped halfway through.
- Finish by texture. The eggplant is ready when it is very soft and light golden brown.
Timing: 15 to 20 minutes, judged by texture
The method calls for 15 to 20 minutes in the oven. The 20-minute cook time on the recipe card is the app's estimate, the top of that range, not a time measured in a test kitchen. Ovens and eggplants vary, so the finish described in the method matters more than the clock: very soft and light golden brown. Let the pieces cool before offering, and check their softness yourself.
Shapes, age labels, and readiness
The app recipe gives two cut examples: finger-shaped sticks about 3 x 1 inch for younger babies, or 1/2-inch bite-sized pieces for older infants. These are examples of shape, not a size that's guaranteed safe for every child, so cut for what your own baby can currently manage.
The app also labels this recipe from 6 months. An age label isn't a readiness check. The UK's NHS describes starting solid foods at around 6 months together with signs of developmental readiness. Whenever you offer roasted eggplant, have your baby sitting upright and supervised, and let them handle the food and set the pace. Questions about your own child's readiness are best taken to your pediatrician.
Allergens and labels
The recipe's allergen list is empty because neither eggplant nor olive oil is one of the 9 major food allergens the FDA identifies. That isn't a promise that the dish is allergy-free: the FDA notes that other foods can also cause allergic reactions, and product labels matter. Check the label on the olive oil you actually use. Our guide on how to read baby food labels has more on reading them.
