These zucchini carrot fritters are small pan-cooked rounds of shredded zucchini, shredded carrot, mozzarella and egg. The eggs bind the mixture, so the recipe uses no flour, breadcrumbs, baking powder or added salt. You're aiming for fritters that are golden outside, fully set inside and soft enough for your child to manage.

Who this recipe is for

The zucchini serving guide in the Yummy Bites app lists fritters in its 12 months and up stage, so we present this mixed dish for toddlers rather than as a first food. Age alone doesn't mean a child is ready. The CDC advises matching the shape, size and texture of food to a child's development, so adapt how you serve these to your child's chewing and self-feeding skills.

Ingredient checks

  • Measure 1 cup each of shredded zucchini and shredded carrot and 1/2 cup of shredded mozzarella. Some fritter recipes squeeze the zucchini or add flour. This one doesn't, and we haven't tested those changes.
  • The fritters contain egg and milk (from the mozzarella), both major food allergens in the US according to the FDA. If you use packaged shredded mozzarella, read the ingredient label; our guide to reading baby food labels can help. If your child has a known or suspected egg or milk allergy, talk with their clinician before serving. If you notice a possible reaction, contact a health professional.
  • Use olive oil or avocado oil, just enough for a light coating in the pan.
  • Wash the bowl, utensils and surfaces that touched raw egg, as the FDA advises.

Doneness matters more than the clock

The app lists about 10 minutes of prep and 10 minutes of cooking. Those are app estimates, not times we measured, and your pan and batch size can change them. Check the fritters instead:

  • Golden, not dark. Medium-low heat lets the outside color gently while the inside cooks. A dark, hard or crispy crust works against a soft texture, and the CDC advises avoiding foods that are hard or difficult to chew.
  • Egg fully set. Break one fritter open; there should be no wet or runny egg. The FDA and FoodSafety.gov list 160°F (71°C) for egg dishes, measured with a food thermometer.
  • Soft vegetables. The zucchini and carrot shreds inside should be soft, not firm or crunchy.
  • Cooled. Let the fritters cool on a wire rack and check that they aren't hot before serving.

Serving and leftovers

Seat your child upright, stay with them while they eat and keep the meal calm and unhurried, as the CDC recommends. Let your child set the pace.

Sources and review

This recipe is adapted from the Zucchini Carrot Fritters recipe in the Yummy Bites app. The ingredient amounts and cooking method follow the app recipe, and we added the doneness checks above. We checked it against the FDA's egg safety and food allergy pages, the FoodSafety.gov temperature chart and the CDC's choking hazards page, all linked above. It has not been kitchen-tested or clinically reviewed by Yummy Bites. The app recipe gives no yield, so we don't list one. The photo is an AI-generated illustration, not a picture of this recipe as cooked, and it doesn't show doneness or texture.

Preparation time

Total time

Ingredients

  • 1 cup shredded zucchini
  • 1 cup shredded carrot
  • 1/2 cup shredded mozzarella cheese
  • 2 eggs
  • Olive oil or avocado oil, as needed for a light coating in the pan

Method

  1. Combine In a medium mixing bowl, stir together the shredded zucchini, shredded carrot, mozzarella and eggs until the mixture is fully combined.
  2. Heat the pan Place a large skillet over medium-low heat and add a light coating of olive oil or avocado oil.
  3. Form the fritters Scoop about 2 tablespoons of the mixture into the hot skillet for each fritter and gently press each mound into a round patty. Cook in batches so the pan isn't crowded.
  4. Cook Cook until the bottom is golden, then turn and cook the second side until golden and the egg is fully set. Aim for golden rather than dark or hard. Egg dishes should reach 160°F (71°C) on a food thermometer.
  5. Check doneness Break one fritter open. The egg should be fully set with no wet or runny areas, and the zucchini and carrot should be soft. If not, continue cooking over medium-low heat.
  6. Cool Transfer the fritters to a wire cooling rack and let them cool slightly. Check that they aren't hot before serving.

Serving

Presented in a toddler (12 months and up) context because the Yummy Bites zucchini serving guide lists fritters at that stage. Age alone doesn't mean a child is ready. Match size, shape and texture to your child's chewing and self-feeding skills, check that the fritters are soft and cooled, seat your child upright and stay with them while they eat.
